A staple of the High Weald Dairy Christmas Cheese offering, our Brighton Belles are miniature whole wheel versions of our popular Brighton Blue. At 250g, they are the perfect centre piece for a festive cheeseboard and are a mild, semi-soft cheese with a mellow blue flavour. They have a slightly salty finish with a delicious melt in the mouth texture and edible rind.
Our Brighton Blue cheese is made all year round and is available made from Organic Milk and Convention Milk, both as 150g pieces, quarter wheels and half wheels!

The promotion of mould within the cheese is created by piercing the cheese with long needles to create air passages that allow the mould to grow.
