Outline of the cheese tour experience of our Sussex Dairy – For Groups of 4-12People

With tea or coffee on arrival, you will receive a brief history of our dairy and an overview of how cheese is made.

The Cheese Dairy Tour will give you a greater insight into how cheese is made in the dairy.

The tour will take around 1 hour and will take you through the cheese making process from start to finish, from the arrival of the raw milk in the raw milk room, followed by a walk through the production and brining rooms where over 90 wheels of cheese can be made each day, onto the Packing area, where whole cheeses are cut and packed into a range of shapes and sizes.

And finishing in the Cheese Maturing Room, to see where the magic really happens where the cheeses might stay for up to 6 months and where they ripen and are look after carefully by our affineur.

A Tutored cheese tasting follows, here you will learn about the 7 main types of cheese and then taste up to 7 of our cheese, all made at the dairy from cow, sheep and goat milk.

Ideal for groups of 4 to 12 people but please contact us if your group has less. The Tour and Tasting is a fun and educational experience, ideal for foodies, and will give you confidence to make a fresh soft cheese at home and to learn more about the cheese making process and the alchemy of how our cheese makers make such an array of cheeses.

We have a maximum number of 12 people per tour and only run tours if we have a minimum of 4 people attending.

The tours start at 11am so please ensure you arrive by 10:45am for a meet and greet before we start.


Stephen Saunders
With his enthusiasm and thirst for knowledge of cheese, Stephen will guide you through the cheese making process at High Weald Dairy. You will also learn the art of cheese making, the history of cheese and how British cheese is taking on the world.

Mark Hardy is passionate about cheese and has had more than 25 years’ experience in cheese-making using cow, sheep and goat milk and covering most cheese types. He explains the process in simple down-to-earth language and ensures everyone has a relaxed but educational day and leaves with the knowledge and confidence to make cheese at home.


Sarah Hardy organises the cheese courses and although she is not a cheesemaker, enables the smooth running of the day. She is likely to be your first point of contact when booking a course and makes sure that everyone attending feels at home on the day.


The High Weald Dairy is on the outskirts of the village of Horsted Keynes.

By car: The Dairy is just 30 minutes’ drive from the M25. Take junction 6 (A22) or junction 7 (M23) on the M25. Sat nav: RH17 7EA.

By train: Haywards Heath is the closest train station to the Dairy. Trains from London, Victoria Station depart every 15 minutes to Haywards Heath. It takes approximately 50 minutes. Regular Trains depart from Brighton and take 20 minutes to Haywards Heath Station where there is a taxi rank. Taxis from Haywards Heath Station to the Dairy will take just 15-20 minutes. From abroad: Gatwick Airport is close by (30 minutes), again with very regular trains to Haywards Heath Station.
