Brighton Ewe is made in a similar manner as our popular Brighton Blue cheese, but with sheep milk! The cheese has a bright white interior that is typical of Ewe’s milk cheeses, with light marbling from the blue mould, distributed throughout the paste.
Brighton Ewe has a well-rounded, slightly nutty flavour and a creamy texture. The blue flavour does not overpower the palette like some blue cheeses, instead adding layers of long, delicate, moreish flavours.
CHEESE FACT
The history of blue cheese dates back to the 7th century and a cave outside the village of Roquefort in France. Legend has it that a shepherd forgot his lunch of cheese in the cave, where the cheese then developed a natural mould!
