Sussex Slipcote Bonbons

Serves 4 as a starter


200g High Weald Dairy Sussex Slipcote cheese
100g sun blushed tomatoes
50g black olives
3 tblsp basil
1 clove garlic
1 tblsp plain flour
Pinch of salt and pepper
Egg and a touch of milk, whisked


Place all ingredients, apart from the breadcrumbs and egg mix, in a blender and pulse until well combined. Roll into 3cm balls (you should get 12 from the mixture). Dip each one in the egg mix and then breadcrumbs. Repeat if necessary and then shallow fry until golden brown all over. Serve with a winter salad of endive, beetroot and orange.
