Little Sussex & Tomato Tart

Serves 4 for a main course


2 x High Weald Dairy Little Sussex cheeses
1 tblsp pesto
1 sheet ready rolled puff pastry
3 large ripe tomatoes, sliced
1 small bunch thyme
Rocket leaves to garnish


Preheat an oven to 200 C. Lay out your ready-rolled puff pastry and lightly score the pastry one centimetre in from the edge all the way around. Cover the surface of the pastry with your pesto. Slice the Little Sussex cheeses and lay on top of the pesto. Top with the sliced tomatoes and sprinkle with the thyme leaves and drizzle with extra virgin olive oil. You could also add roasted red peppers. Put on a baking tray with baking parchment and place in the oven for 25 minutes. Serve with a green salad and minted new potatoes.
