Medita Cheese & Chard Filo Parcels

Serves 4 as a starter


150g High Weald Dairy Medita cheese
4 sheets ready rolled Filo pastry
100g butter, melted
Large handful of chard
1/2 red onion, finely diced
1 tbsp chopped mint
1 tbsp chopped basil
1 tbsp extra virgin olive oil
Juice of 1/4 lemon
Salt and pepper to season


Preheat an oven to 200 C. Wash the chard and wilt in a pan with lid. Remove chard from pan, cool and squeeze out excess moisture with your hands. Finely chop the chard and place in a mixing bowl. Crumble the High Weald Dairy Medita cheese into the mixing bowl and add the red onion, mint, basil, olive oil, lemon juice, salt and pepper and then mix well.

On a low heat melt the butter. Place one ready rolled filo pastry sheet on a chopping board and paint with melted butter. Place another sheet on top so the two sheets are stuck together. Cut the double sheet into four equal squares and place a spoonful of the mixture in the middle of each square. Paint the edges of the squares with melted butter. Bring the four corners together to create a parcel. Repeat the above to make another four parcels. The mixture is enough for eight parcels (two each for a starter). Paint the outside of the each parcel with melted butter and place on baking parchment in a baking tray. Place in the preheated oven (200 C) for 20 minutes. Serve with a tomato and red onion salad as a starter. The above quantities would be also make larger parcels for a main course for two.
