Croque Monsieur

Serves 2 for lunch


150g High Weald Dairy Sister Sarah cheese, grated
4 slices bread
2 tblsp melted butter
1 heaped tblsp plain flour
2 tspn butter
250ml whole milk
Half tspn English mustard

For fillings, try one of the following:
Smoked ham, prosciutto, smoked salmon or pickled beetroot


Lightly toast bread and brush with the melted butter. Make cheese sauce by melting 2 tspn butter with 1 tblsp plain flour over a low heat, add milk a little at a time and whisk. When smooth add 50g Sister Sarah Cheese and English mustard. Spread the four buttered toast slices with cheese sauce and half of the remaining cheese. On two of the slices place your filling of choice (smoked ham, prosciutto, smoked salmon or pickled beetroot). Sprinkle remaining cheese on top of the toppings. Then place remaining two slices cheese sauce side up on top. Grill until golden brown and then finish in 180 C oven for 2-3 minutes to heat the filling. Serve with crisp green salad.
