Baked Little Sussex with Apple Jelly and Toast
Serves 4 as a starter
4 x High Weald Dairy Little Sussex cheeses
4 cloves of garlic
4 sprigs of rosemary
330ml whole milk
1/4 tsp salt
This is a very easy and delicious starter. If you do not wish to make the apple jelly you can use any similar shop bought jelly – we recommend Ouse Valley Foods, Chilli Jelly. Preheat oven to 180C. Unwrap and place the Little Sussex’s on a lined baking tray. Stud each Little Sussex with a garlic clove and sprig of rosemary and bake for 15-20 minutes. As the Little Sussex has a rind the cheese will keep its shape when baked. Serve with toast and a generous spoonful of apple jelly.
