In the past, bakers would have sourced many ingredients from their local area. Lesley uses linseed meal grown and processed at Barns Green in West Sussex. It was this fine product, with its delicious nutty flavour, that inspired Lesley to create her range of biscuits.
There has been a wonderful revival in the making of artisan-made British cheese in recent years. Therefore, it seemed only fitting to create a distinctive, sweet Sussex biscuit.
