Brother Michael is an organic, semi-soft rind-washed cheese. Based on our Saint Giles, the 'washing' process gives the cheese a beautiful sticky pink rind and a sweet, pungent aroma, which is much stronger than the flavour of the cheese.
If you like it hot, Chilli Marble could be the cheese for you. Based on Saint Giles, it has the addition of red bird-eye chilli. It has an attractive marbling running through it and is rather hot, but with a delicious buttery texture.
Our Oak Smoked Ashdown Forester’s is a young, firm un-pressed cheese with a creamy, slightly squidgy texture, which has been naturally smoked over oak shavings. It has an attractive shape and basket weave texture on the natural rind. Matured for around three months, Foresters is also available plain (unsmoked). Both are organic cheeses.
Ricotta (meaning re-cooked cheese) is a, compact semi hard salty cheese made using cow and sheep whey. We make it by heating the organic whey left over from making a hard cheese to 90°C, resulting in the soft cheese then floating to the surface.
