SHEEP MILK CHEESE

SHEEP MILK CHEESE

  • Organic Sheep Milk Ricotta

Ricotta (meaning re-cooked cheese) is a fresh, low-fat, soft cheese. We make it by heating the organic whey left over from making a hard cheese to 90°C, resulting in the soft cheese then floating to the surface. Our Ricotta has a slightly granular texture a mild flavour, works well in both sweet and savoury dishes, from cheesecakes to baked pasta dishes.

Barties Sussex Faire, is a family owned business. It was started by John Bartlett in 2008 as a hobby, but it is now a full-time job. Bartie makes the  chutneys  himself  in his  home kitchen using traditional methods. He makes in small batch sizes. The only other workers are  his direct family members.

He is a producer of award-winning artisan chutneys, jams, marmalades, jellies, mustards, relishes and sauces.

These  chutneys are lovingly made in small batches. Sourced from seasonally  produced  ingredients from around the local areas of  Sussex and Kent.

Some fruits, John grows in his own garden and those of  his friends and neighbours. He sources many of his  ingredients from local suppliers wherever possible,  this includes  using local small-firms. In the past, bakers would have sourced many ingredients from their local area. Lesley uses linseed meal grown and processed  at Barns Green in West Sussex. It was this fine product, with its delicious nutty flavour, that inspired Lesley to create her range of biscuits.

There has been a wonderful revival in the making of artisan-made British cheese in recent years.  Therefore, it seemed only fitting to create a distinctive, sweet Sussex biscuit.

  • Brighton Ewe – 125g wedge

Brighton Ewe is a new cheese made by High Weald dairy.

Made in the same manner to our popular Brighton Blue, but using just 100% Ewe’s milk, Brighton Ewe has a mellow, well rounded flavour, with a rich creamy texture.

Brighton Ewe has a white interior that is typical of Ewe’s milk cheeses with a light blue marbling through the paste, typically a lot less blue than many blue cheeses. The natural grey blue is edible.

Unlike Roquefort, one of the Great blue Ewe’s milk cheeses, Brighton Ewe is mild and mellow with a light saltiness, although its strength will develop with time. Bronze Award at International Cheese Show 2019.

Ingredients: Pasteurised sheep milk, salt, cultures and blue moulds. Suitable for vegetarians.
