SHEEP MILK CHEESE
Brighton Ewe is a new cheese made by High Weald dairy.
Made in the same manner to our popular Brighton Blue, but using just 100% Ewe’s milk, Brighton Ewe has a mellow, well rounded flavour, with a rich creamy texture.
Brighton Ewe has a white interior that is typical of Ewe’s milk cheeses with a light blue marbling through the paste, typically a lot less blue than many blue cheeses. The natural grey blue is edible.
Unlike Roquefort, one of the Great blue Ewe’s milk cheeses, Brighton Ewe is mild and mellow with a light saltiness, although its strength will develop with time. Bronze Award at International Cheese Show 2019.
Ingredients: Pasteurised sheep milk, salt, cultures and blue moulds. Suitable for vegetarians.
