The organic version of our most recently-developed cheese, Seven Sisters. Named after the Seven Sisters chalk cliffs in East Sussex, it is a semi-soft matured organic sheep milk cheese, coated in a layer of Hebridean seaweed. As well as looking interesting, Seven Sisters has a light nuttiness to it and the seaweed coat makes it very difficult to resist.

Garlic and herbs are added to our Sussex Slipcote cheese to make this tasty variety. The plain cheese is a fresh soft cheese made with organic sheep milk. It has a light, creamy, fluffy texture and a slightly sharp refreshing flavour. Packed in small 100g “buttons” or 500g “logs”, it is also available to buy Plain or flavoured with Cracked Black Peppercorn or Dill.

A fresh soft cheese made with organic sheep milk, Sussex Slipcote has a light, creamy, fluffy texture and a slightly sharp refreshing flavour. This variety is flavoured with dill and available in small 100g “buttons”. It is also available flavoured with Garlic & Herb or Cracked Black Peppercorn, or Plain.
A delicious soft sheep milk cheese with a bloomy white coat. Little Sussex is actually a matured plain Sussex Slipcote cheese. It has a mild delicate flavour and a fluffy texture when young, but becomes stronger and more flavoursome as it ages. Serve with crusty bread, or grilled with a salad.
Ricotta (meaning re-cooked cheese) is a fresh, low-fat, soft cheese. We make it by heating the organic whey left over from making a hard cheese to 90°C, resulting in the soft cheese then floating to the surface. Our Ricotta has a slightly granular texture a mild flavour, works well in both sweet and savoury dishes, from cheesecakes to baked pasta dishes.

Typically known as ‘Feta’, this cheese has its origins in the Mediterranean and we make the cheese in the traditional way with 100% organic sheep milk and then mature it in brine for over five months. It is a semi soft crumbly cheese with a distinct, sharp, fresh, salty flavour.

Halloumi is a salty brined “squeaky” cheese, originally from the Mediterranean and traditionally made from sheep milk. Once dry fried or grilled it takes on a completely different texture – we call it “the vegetarians alternative to the rasher”. We make two varieties, this one which is made with 100% Sheep milk halloumi and a blended Halloumi using cow and sheep milk. Try it toasted on a summer salad or into a stir fry, addimg mushrooms, tomatoes, oregano, peppers and serving on a bed of rice, pasta or cous-cous.
