Pecorino is the name of a family of hard Italian style cheeses from sheep milk. The word pecora, from which the name derives, means sheep. Most are aged and sharp.

It is white curd when young, but becoming deeper yellow as it matures for up to 10 months. The younger cheeses are rich, creamy and nutty, while the mature cheeses become piquant with age , eventually being ideal for grating on pasta dishes, in a similar way to Parmesan. The whole cheeses have an interesting basket weave pattern on its surface, and a natural rind.
