WELCOME TO OUR TRADE PAGE

High Weald Dairy is family owned and run by Guy, Mark and Sarah Hardy from our farm in Horsted Keynes, West Sussex. From locally sourced cow, sheep and goat milk, our talented cheese makers craft a range of multi award winning artisan, some organic, cheeses. All our cheese is made with vegetarian rennet. Our full range of cheeses can be viewed on this page.

Cheese Sizes: All our cheeses are available either in pre packed wedges in 1kg packs (typical pack quantity 6-7) or as quarter, half or whole cheeses ready for cutting on the deli-counter. A whole cheese is around 3.8kg.

Delivery: We can arrange delivery either with our van that goes out every week to selected areas in London and the South East or by over-night courier.

Tasters: We can also provide pre-cut tasters of any of our cheeses for your customers to try.

DUDDLESWELL  - Sheep milk cheese.

Available as:  Organic, Non Organic, Organic Oak Smoked, Non Organic Oak Smoked - 1kg packs of 6-7 wedges and quarter, half and whole cheeses.

Shelf Life: 10 Weeks.

A full fat hard cheese made from pasteurised Sheep milk.It is a well rounded, rich flavoured cheese, mildly acidic taste incorporating ewes milk character, sweet and buttery notes.Once made, the cheese is matured in carefully controlled conditions, and turned daily for up to five months, until each batch is graded, ready for sale, by the cheese maker. The resulting cheese has a smooth creamy texture and delicious nutty flavour.

LITTLE SUSSEX - Organic soft Sheeps milk cheese

Shelf Life: 5 weeks 

Little Sussex is a small cheese of about 80g, with a bloomy white coat. Based on our fresh Plain Sussex Slipcote, it is matured for 10 days before packing.

Little Sussex has a delicious, mild delicate flavour and fluffy texture when young, but becomes stronger and more flavoursome as it ages.

SUSSEX SLIPCOTE - Organic soft Sheeps milk cheese

Available as: 500g logs or 100g buttons. Plain, Garlic & Herb, Basil, Peppercorn.

Shelf Life: 5 weeks

Made with 100% sheeps milk. The name ‘Slipcote’ is an old English word meaning little (slip) piece of cottage (cote) cheese. Slipcote has a light fresh creamy texture with a clean slightly sharp lemony taste. It is a mild, soft creamy cheese made with pasteurised sheep milk.

HALLOUMI  - 100% Sheep milk

Available as: Orgainc and Non orgainc 1kg packs of 6-7 pieces.

Shelf Life: 10 weeks

A salty, brined cheese, originally from the Mediterranean and traditionally and most successfully made from sheep milk, is, before cooking, a squeaky cheese. Once dry fried or grilled it takes on a completely different texture and taste, with a texture reminiscent of a grilled marshmallow with a crusty outside and a soft centre and a taste similar to that of bacon.

Often now imported, made from cow milk, and maybe a dash of sheep or goat milk, you will find that High Weald Dairy Halloumi made from 100% sheep milk tastes the best. 

 

   

MEDITAA Mediterranean Style Sheep Milk Cheese
Available as:  Orgainc 1kg blocks, Orgainic and Non Orgainc 1kg packs of 6-7 pieces.
Shelf Life: 10 weeks
Better know as ‘Feta’ it has it’s origins in the Mediterranean and we make the cheese in the traditional way with organic sheep milk and then mature it in brine. 
It is a semi soft crumbly cheese with a distinct, sharp, fresh flavour.

 

RICOTTA - 100% Sheep Milk

Available as: Organic 1kg packs of 6-7 pieces.

Shelf Life: 4 weeks

Ricotta (literally meaning "re-cooked") is made by reheating the whey after the initial cheese making process, producing a delicious fine curd. Ricotta is a fresh cheese (as opposed to ripened or aged), grainy and creamy white in apperance, slightly sweet in taste and contains around 5% fat.

Our Ricotta is made from 100% sheep milk. It is a versatile cheese to cook with and lends its self well to both savoury and sweet dishes . Please do not confuse our Ricotta with supermarket varieties which are often very watery!

   

SISTER SARAH Goat Milk Cheese

Available as: 1kg packs of 6-7 wedges and quarter, half and whole cheeses. 

Shelf Life:  8 weeks

A mild semi soft cheese made in our dairy with Goat milk. The cheese is very white as goats digest all the carotene in the grass.The milk is cooled immediately after milking and this results in a mild cheese, with a delicious flavour and without any “goatiness”, which is often associated with goat cheese. In fact most people will not realise that it is a goat milk cheese.Coated in annatto (a south American berry), gives the cheese a cheerful bright orange rind.

Brighton Blue - Our new blue cows milk cheese.

Available as: 1kg packs of 6-7 wedges and quarter, half and whole cheeses.

Shelf Life: 4 weeks

This newly launched cheese has a slightly open, semi-soft texture, a mellow blue flavour and a slightly salty finish. The distinctive blue green veins in the cheese deepen as the cheese matures, and the taste of the blue becomes stronger.

SAINT GILES - Semi soft cows milk cheese.

Available as: Organic and Non Orgainc, 1kg packs of 6-7 wedges and quarter, half and whole cheeses.

Shelf Life: 10 weeks

The cheese is an English equivalent to the continental style Saint Paulin or Port Salut style of cheese found in France. Saint Giles, made with cows milk is a semi soft creamy cheese. It has a rich, buttery texture, a creamy mild flavour and a stunning edible orange rind. .

SUSSEX MARBLE - Semi soft cows milk cheese

Available as: 1kg packs of 6-7 wedges and quarter, half and whole cheeses.

Shelf Life: 10 weeks

A continental style, semi soft creamy cheese derived from Saint Giles, infused with Garlic and Herbs.

Fantastic if melted on steak or chicken or use as a ready made garlic butter without the hard work.

 

CHILLI MARBLE - Semi soft cows milk cheese

Available as: 1kg packs of 6-7 wedges and quarter, half and whole cheeses.

Shelf Life: 10 weeks

A continental style, semi soft creamy cheese derived from Saint Giles, infused with hot and spicy chilli. 

 

SUSSEX CHEDDAR - Hard cows milk cheese

Available as:  Organic, Non Organic - 1kg packs of 6-7 wedges and quarter, half and whole cheeses.

Shelf Life: 10 Weeks.

Sussex Cheddar, (Tremains Organic) is made using the organic cows’ milk from our farm. Matured for up to 5 months, it is golden yellow in colour, medium in strength and has a firm, but crumbly texture.

ASHDOWN FORESTERS - unpressed cows milk cheese

 

Available as:  Organic, Organic Oak Smoked,  - 1kg packs of 6-7 wedges, half and whole cheeses. Whole cheeses 2.2kg

Shelf Life: 10 Weeks.

Ashdown Foresters is an un-pressed cheese, quite firm, slightly open texture, has an attractive shape with its basket weave pattern on its surface. Medium in strength, it is a rounded cheese, with a sharp, buttery character and slight saltiness, but with savoury and lemon back notes.

Ashdown Forester takes 8 hours to make, but 3 months to mature in our cheese store, in carefully controlled conditions.

For the smoked version ,after a period of maturation, the whole cheeses are gently smoked at the Dairy, over oak shavings. Care is required in order to create smoke without heat, other wise the cheeses could begin to melt! Smoking takes around 12 to 36 hours, depending on the weather and prevailing wind. We prefer a light smoke rather than a heavy smoke.

BROTHER MICHAEL - Semi soft, rind washed cows milk cheese.

Available as: Organic, 1kg packs of 6-7 wedges and quarter, half and whole cheeses.

Shelf Life: 8weeks

Created by washing a 6 week matured Saint Giles cheese in brine and special cheese cultures several times a week for four weeks.
This process creates the lovely orange - pink colour on the sticky cheese surface and the distinctive sticky pungent aroma.

The texture is soft and creamy but the flavour is not as strong as the aroma would imply.

SOSTER - Bio Voglia Organic Cows milk cheese

Available as: Organic, 1.3kg blocks or 1kg packs of 5 x 200g wedges..

Shelf Life: 6 months

A hard cheese made with Italian organic cows milk in the parmesan style.

This cheese as with all High Weald Dairy Cheeses, is made with vegetable rennet so is suitable for vegitarians.
